Richard’s Eclair Stair (series 5)

Barnet builder Richard Burr, lucky blue pencil ticked permanently behind his ear, was crowned Star Baker a record five times en route to the 2014 final. One of these came in Pastry Week, when he baked 24 éclairs in two delicate, fruity ’n' floral flavours - lavender and blueberry, rose and raspberry - and served them on a small, self-built wooden staircase. Waste not, want not: Richard later mentioned in passing that he’d re-used the pine steps by turning them into a “chicken ladder” for his henhouse.
