There are various dining options, with two restaurants, a poolside bar and room service. Begin your evening with an aperitif or cocktail in the Silk Roads bar – all panelled windows, chandeliers, and scarlet leather armchairs. For dinner, the top-floor restaurant, Le Cupole, has heady views across the gulf to the hills of Portofino.

Expect refined seafood and fish dishes (mackerel in a tangy marinate of tea matcha, turnip and tangerine or seared scallops with Colonnata lard), and creative takes on local traditions: tortellini filled with ciuppin (Genoese fish soup), or the catch of the day – salt-grilled, Ligurian style. Excellent wines, attentive service.

For breakfast (a generous buffet spread), head to the vast Chamberlain Terrace restaurant overlooking the pool and sea.
